Ingredients for Camel Biryani

  • Basmati rice - 2 cups
  • Camel meat, cubed - 500g
  • Onions - 2 large, thinly sliced

  • Ginger-garlic paste - 1 tablespoon

Preparation and Cooking Method

Preparing the Rice

Wash basmati rice thoroughly and soak for 30 minutes. In a large pot, bring water to a boil and add the rice along with a pinch of salt. Cook until the rice is 70% done. Drain and set aside.

Cooking the Camel Meat

In a separate pan, heat 2 tablespoons of ghee or oil. Sauté the sliced onions until golden brown. Add ginger-garlic paste, green chilies, and sauté until fragrant. Add chopped tomatoes and cook until softened.

Add camel meat cubes and cook until they are lightly browned on all sides. Stir in yogurt, chopped cilantro, mint leaves, and whole spices (bay leaf, cinnamon stick, cardamom pods, cloves). Season with salt to taste. Cook for another 30-40 minutes until the camel meat is tender.

In a heavy-bottomed pot, layer the partially cooked rice and camel meat mixture alternately. Optionally, drizzle saffron milk over the top for added flavor and color. Cover tightly with a lid.

Place the pot on low heat and let it simmer in its own steam (dum) for 15-20 minutes. This allows the flavors to meld together perfectly and the rice to finish cooking.
