Cooking the Goat Biryani

Cooking Onions: Get a big pot, warm up some ghee or oil. Toss in the thin onion slices and cook ’til they sport a golden brown look. Take half the cooked onions out; we’ll use those for decoration later.

Preparing the Meat: With the onions still in the pot, mix in your marinated goat meat. Keep the heat on medium. Continue until you notice the meat beginning to brown.

Start by including the tomatoes and spices. Mix the cut-up tomatoes, biryani masala, garam masala, and green chilies into the meat. Give it all a good mix. Leave it to cook till the tomatoes soften and the oil detaches from the rest of your mixture.

Building the Biryani: Use the same pot, spread out half of the semi-cooked rice on top of the meat. Scatter half of the cut coriander and mint leaves. Include the rest of the rice and finish with the remaining coriander, mint leaves, and crispy onions.

Dum Style: Put a snug lid on the pot. Let it simmer on mild heat for about 20 to 25 minutes. This leisurely cooking process, called “dum,” helps the tastes blend harmoniously.

Serving the Goat Biryani

When the biryani’s ready, use a fork to gently stir it. Enjoy it hot with vibrant coriander sprinkled on top and some cool raita on the side.
